oudans,Crevecceurs, and La Fleche. Of these the Houdans (fig. 18) areconceded to be the most popular and profitable, being bred to a great 51 33 extent throughout the entire country. They are hardy and prolificlayers of large, white eggs. For table purposes they are amongthe best fowls. They have small bones and the flesh is tender anddelicious. The chicks are sprightly and active and feather rapidly.They are nonsitters and light feeders. Like the Leghorns, they maybe fed at a small cost as compared with some of the larger breeds.They are of medium size and of a mottled plumage, black and whiteintermixed, the black predominating. Houdans are a crested variety.The crest of the cock is large, well fitted upon the crown of the head,falling backward upon the neck, and composed of feathers similarin shape and texture to those of the hackle. A peculiarity of the breed is their havingfive toes, like the Dorkings; shanks and toes are of a pinkish-whitecolor, mottled or shaded with lead color or black. The standard weight of cocks is 7 pounds; hens, 6 pounds; cock-erels, 6 pounds; pullets, 5 pounds. CBEVECCEtrES. This variety is not so generally known in this country as theHoudans, but in France, their native country, they are bred exten-sively for market purposes. They are considered of superior qualityfor the table, their flesh being white and delicately flavored. They 51 34 are of gentle disposition and do well in confinement. They have weakconstitutions and require extra care and attention. As layers theyare only fair, and are nonsitters. They are a crested variety, have aleaf comb like the letter V in shape, and in plumage are a rich, glossyblack throughout.
